My mother-in-law bought us a quesadilla maker for Christmas. We tried it for the first time tonight. This is the impromptu recipe I came up with based on the ingredients we had. I was slightly apprehensive, but it was soooooooooooooooooooooooo goooooooooooooooooooooood!
- 8 tortillas
- lots of grated cheese
- one can of Rotel (or salsa, but we were out of salsa)
- fresh cilantro
- a tube of maple sausage (trust me on this, it needs to be maple, I think I used Jimmy Dean)
Brow the sausage like ground beef. Put some sausage, cheese, Rotel, and cilantro in between two tortillas. Put in the quesadilla maker or make in a skillet (toast one side, flip over, toast the other side). Pass out because you ate enough for five people.
Seriously, this was so good I ate way too much. I just want a lie down now.
